Roasted Chicken Curry Roasted Chicken Creole Roasted Chicken Chili Roasted Chicken Salad

 

Roasted Chicken Chili
2 cups fully cooked roasted chicken breast
1 tsp. vegetable oil
1 cup onion, chopped
1/4 cup green pepper, chopped
1 1/4 tbs. chili powder
3/4 tablespoons cumin
1/4 tsp. salt
1 14 oz.can diced tomatoes,undrained
1 8 oz. can tomato sauce
1 15 oz. can Kidney beans, dark (optional)
Shredded cheese
Green onions, chopped

Preparation
Heat oil in large skillet or Dutch oven over medium high. Saute onion and green pepper until clear. Add spices,tomatoes,tomato sauce and kidney beans. Stir until blended and add chicken. Reduce heat and simmer 20 minutes. Serve in bowls topped with cheddar cheese and chopped green onions. TIP: If using breast halves remove and discard skin and bones.
