Roasted Chicken Curry Roasted Chicken Creole Roasted Chicken Chili Roasted Chicken Salad

 

Roasted Chicken Curry
2 cups fully cooked roasted chicken breast
1 tsp. prepared garlic, minced
1 medium onion, chopped
1 large apple, chopped
1 cup frozen peas
14 oz. sliced new potatoes, cooked
14 oz. diced tomatoes
1 8oz. can tomato sauce
1 cup chicken broth
1 tsp. red pepper
1 tsp. chili powder
2 tsp. curry powder
1 tsp. salt
1 tsp. Lemon juice
2 tablespoons butter
Hot cooked rice

Preparation
Melt butter in large skillet or Dutch oven over medium high heat. Add garlic, onion and apple, saute until clear. Add chicken,diced tomatoes,tomato sauce, chicken broth and spices; stir. Add frozen peas,sliced potatoes and lemon juice. Stir to blend. Bring to a boil, reduce heat to low. Simmer 10 minutes. Serve over rice.
TIP: If using breast halves remove and discard skin and bones.
