Roasted Chicken Curry
2 cups fully cooked roasted chicken breast
1 tsp. prepared garlic, minced
1 medium onion, chopped
1 large apple, chopped
1 cup frozen peas
14 oz. sliced new potatoes, cooked
14 oz. diced tomatoes
1 8oz. can tomato sauce
1 cup chicken broth
1 tsp. red pepper
1 tsp. chili powder
2 tsp. curry powder
1 tsp. salt
1 tsp. Lemon juice
2 tablespoons butter

| Preparation |
Melt butter in large skillet or Dutch oven over medium
high heat. Add garlic, onion and apple, saute until clear. Add chicken,diced
tomatoes,tomato sauce, chicken broth and spices; stir. Add frozen peas,sliced potatoes and
lemon juice. Stir to blend. Bring to a boil, reduce heat to low. Simmer 10 minutes. Serve
over rice.
TIP: If using breast halves remove and discard skin and bones. |
